A. You don't. FDA regulations require that food must be prepared in a commercial kitchen. In practice, new cash-strapped food businesses often rent existing commercial kitchens and work there at night, when owners and their employees go home.

A. Having returned from Iraq none to long ago, here's what worked for my family/friends: -Cookies survive the best: Wrap cookies in pairs, back to back, in plastic wrap. Put the pairs of cookies in to zip-lock bags, then pack them gently in a smaller box with newspaper. Put that box inside a larger box, also padded with news paper. -Bread: Store bought bread is nearly indestructible; just pack it so it won't get crushed. -Homemade breads are a coin toss. Some times they make it; some times they don't. Wrap them in foil as soon as they cool, then wrap them in plastic, then a ziplock bag. Don't send anything moist like cake or banana bread; they will almost always spoil on the trip over. -Avoid anything that can melt; like chocolate. Even… [cont.]

How do I mail baked goods?
Q. I'm a full-time student and I'm not planning on opening up my own bakery anytime soon, but I know that I could make some money on the side from selling things that I bake: cakes, cookies, brownies, rolls, cupcakes, breads, and pies. I have a shop at etsy.com where I'm planning to sell these things, but I wonder... How do I mail baked goods? Should they be frozen first? Do I have to pack them with dry ice? I'm already planning on mailing them the same day that I bake them, but are there other precautions I should take? Thanks for your help!

A. Cookies, brownies, rolls and breads will ship best. Avoid cakes and pies, the cost of shipping safley would be prohibitive. Not to mention the very likely risk of them arriving a mess. I ship lots of baked goods around the holidays and this is how I do it. Cookies are packed according to type. Soft cookies I package in twos, back to back and wrapped with a small piece of plastic wrap. Crisp cookies are best packed in an airtight container or vaccum sealed to retain freshness. Pack them in a cookie tin if possible, or at least a very sturdy box. Cushion them with newspapers or paper towels wadded up. Place that box in a bigger box and ship as quickly as possible. I use Priority Mail to save money, but that's me. Rolls and breads… [cont.]

What should I do to make baked goods sweeter?
Q. Most of my baked goods always tend to come out sort of... bland I guess? I follow the recipe to the letter, but cookies or cupcakes never seem to come out quite how I'd like them to. What can I do to make them sweeter? I've tried adding more sugar already... Also, I usually add an extra egg, to try and make it more moist, but it never seems to come out as moist as I'd like either, what could I do for that?

A. The best size of package to use is a USPS Flat rate priority shipping box. The one that looks like a slightly oversized shoe box, not the one that looks like a shirt box. These boxes ship for $7.70. Such a great deal! If packed carefully, you can get 4 to 5 dozen cookies safely packed into the box. Assemble everything you need - bubblewrap or tissue or plastic bags. This material will be used to fill up the spaces around the boxes you will set inside the flat rate priority box. Don't try to send the cookies overseas without the inner boxes. They just won't make it. Can't find a box to fit? You can cut one down, tape the edges and now you have a custom made box to fit. When I ship cookies overseas I use two white bakery boxes that fit… [cont.]

Do I need a license to sell baked goods at a flea market?
Q. I was wanting to sell baked goods, like cookies and candy at a local flea market. I was going to list the ingredients on the packages. I have a transient vendor's license which allows me to collect sales tax. Do I need an additional license of some kind to sell baked goods? Will it require an inspection of where the baked goods are made? If so, what is the license called and where would I go to acquire one?
Asked by Zed - Wed Apr 18 21:44:07 2007 - - 3 Answers - 0 Comments

A. In almost every state in the US, it is illegal to sell food not prepared in a health dept approved kitchen. You need some really good liability insurance. If anyone became ill or died from your goods, you would be sued. If you are not a company protected by an LLC or other specification, you could lose everything you have plus pay for the rest of your life. Your states web page should have links to all the info you need for licenses and regulations.

Have you used the Reynolds Handi-Vac on baked goods?
Q. I do alot of baking around the holidays and this year I would like to mail some cookies, bread and small cakes. Has anyone used the Handi-Vac on baked goods? How long did they stay fresh? I see on their website it lists the freezer life,, but not the "shelf life" at room temperature. Thanks in advance!
Asked by Rachel G - Wed Jun 4 17:01:35 2008 - - 1 Answers - 0 Comments

A. I use it for cookies. It doesn't seem to make them last longer at room temperature, but when I did open them up 2 weeks later, they tasted fine. I mail out a lot of goodies for the holidays and all I do is to package them in ziploc bags, put them in the holiday tin and ship them off. Everyone loves them.

How can I sell baked goods at the farmers market in NC?
Q. I want to sell some baked goods at my local farmers market. How can I get started?
Asked by mellocello391 - Sun Nov 29 21:43:07 2009 - - 1 Answers - 0 Comments

A. Go to the farmers market where you want to sell and talk to the market manager about the state rules regarding baked goods at market. The regulations vary widely state to state. Some stated require a fully licensed kitchen to produce anything cooked other have "Cottage Industry Rules" that do not require a licensed kitchen. At any rate the market manager will know all about this. if they do not or there is no management than find another market if you want success in this endeavor.

Tips on sending baked goods through the mail?
Q. With the holiday season coming up fast, i'm wanting to send some baked goods through the mail to someone for the holidays. I've never sent any kind of food through the mail, so what i'm wondering is how should I package the stuff to keep it from spoiling and looking mangled by the time it arrives at it's destination? Any tips at all on shipping food would be very helpful!
Asked by Joshua's~ ~Girl - Sun Nov 19 12:16:16 2006 - - 5 Answers - 0 Comments

A. Make sure that the container that you put your food in is non-crushable, like cute metal containers, or cheap plastic (both available at Wal-mart). If your doing cookies, put a layer of bubble wrap in the bottom of your container, and on top, for cushion. Also, make sure they are firm cookies, not a crumbly recipe to begin with. I also send home made bread, it works wrapped in plastic, sealed well, then I wrap in bubble wrap. Make sure your box that you are mailing is tightly packed with packing peanuts, crushed newspapers, more bubble wrap, ect., to stop shifting in the mail. All should arrive in great shape. Also, I usually send my a higher class of mail so it gets there sooner.

A. Do you have any Cream of Tarter? Your flour is plain flour, right? Substitute 1/4 teaspoon of baking soda plus 1/2 teaspoon cream of tartar for each teaspoon of baking powder required. Here's a good recipe without baking powder: Chocolate cake 3c. Flour 2c. Sugar 2t. Baking Soda 1/2c. unsweetened cocoa 1t. salt 2t. vanilla extract 2c. COLD water 1 1/2 sticks melted butter 2 eggs plus 1 egg yolk Mix all the dry ingredients in a big mixing bowl and set aside. In a separate bowl beat the eggs and vanilla, add the cold water and the melted butter last. Don't add the melted butter until you add the water so that you don't scramble the eggs. Slowly add the wet ingredients to the dry and mix until just blended. Pour into two 9inch cake pans… [cont.]
