A gluten-free diet is a diet completely free of ingredients derived from gluten-containing cereals: wheat (including kamut and spelt), barley, rye, and triticale, as well as the use of gluten as a food additive in the form of a flavoring, stabilizing or thickening agent. It is recommended amongst other things in the treatment of coeliac disease, non-coeliac gluten intolerance, dermatitis herpetiformis, migraines, Lyme disease and wheat allergy. Additionally, the diet may exclude oats. Some people for whom the diet is recommended can tolerate oat products and some medical practitioners say they may be permitted, but there is some controversy about including them in a gluten-free diet because studies on the subject are incomplete. Even if oats are included, it is important to source these from a facility that is gluten free, as most oats are contaminated during processing. Look for oats which are certified gluten free if you are following a gluten free diet.

What is the best gluten free flour mix to use in recipes that call for "all purpose" wheat flour?
Q. There are many ready made gluten free flours available to purchase, but I have never found one that comes close to matching the real thing, i.e.wheat flour. Has anyone experimented with gluten free flour combinations or used ready made mixes that they found as satisfying in baked goods as wheat flour?

A. From experience as a Coeliac of 41 years and a chef of 25 years I havent come across a flour that realy comes anyway close, they are all pretty much the same. Using a bread machine does have better results. Why are my gluten reactions more severe the longer I am gluten free?
Q. I discovered that I am gluten intolerant in December 08. I am mostly gluten free. I sometimes discover that something has gluten in it, when I thought it didn't. However, I am noticing that my reaction to gluten has become very severe now, where before it was much less so. Any ideas?
